Sylvie is a pescatarian restaurant and cocktail bar just a block from the water’s edge in downtown Hobart. Our ingredients are grown, caught and foraged locally, so our menu flexes gently depending on availability.

From tide to table and farm to fork we have no in-betweeners. We meet our producers daily, selecting the pick of their catch and crop. Our dishes often feature just three ingredients with minimal intervention, allowing the flavours of same-day seafood and freshly picked produce to take centre stage.

Our cocktail menu stays seasonal and local too. Aromatics, garnishes and fresh botanicals are picked each day. Our island’s famously clear water enables local distillers to create some of the best small batch whiskies, rums and gins on the planet. Even our bar top is locally grown - a beautiful piece of 1920s reclaimed Tas Oak.

Our restaurant is genre neutral and influenced by a well-travelled Martin who trained in Sydney, then honed his craft across Europe, including at the three-Michelin-star Restaurant Jordnær in Copenhagen, before returning to Tasmania to open Sylvie. Martin’s philosophy centres on seasonally exclusive, locally sourced produce with minimal intervention. It’s an elegant approach he sums up simply: ‘If you nurture ingredients with respect and love, it translates into the taste.’
